Introduction
Attending my Foods and Nutrition I class, one would see that the classroom resembles something out of a 1980’s sitcom family kitchen. Situated in Mountain Lakes, NJ, a city where the average household income is $310,870 (World Population review.com,2022) The kitchen has green painted cabinets, stark white appliances, overhead racks hanging over the stoves loaded with shiny stainless steel and Teflon coated pots and pans, goldish beige Formica countertops and large white sinks with stainless steel washing fixtures.Walls around the kitchen are covered with Safety and Sanitation posters. Others include Measuring Equivalents, Common Cooking Abbreviations and Utensil identification. Students start each class finding their seat around a table arranged in a horseshoe shape. It isn’t long before I instruct them to gather around the demonstration table in the center of the kitchen to view what it is I am teaching them that day. I make sure they all have a clear view and are focused on exactly what I am teaching them. Sign language interpreters and ESL interpreters are positioned so they can see me, and their students can see them.
